Chicken Tortilla Soup

  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 green pepper, chopped
  • Olive oil, for sautéing
  • 1/2 cup frozen corn
  • 1 rotisserie chicken
  • 1 10-oz. can diced tomatoes
  • 5 cups chicken broth
  • 1 1/2 cups water
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1/2 tsp. dried cilantro
  • Tortilla chips
  • Pepper Jack cheese, grated, for topping
  1. Sauté the onion, garlic and green pepper in the olive oil for about 5 minutes. 
  2. Add the corn, chicken and tomatoes. 
  3. Add the broth, water and seasonings; simmer until tender.
  4. Serve over tortilla chips; top with Pepper Jack cheese.
