- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 green pepper, chopped
- Olive oil, for sautéing
- 1/2 cup frozen corn
- 1 rotisserie chicken
- 1 10-oz. can diced tomatoes
- 5 cups chicken broth
- 1 1/2 cups water
- 1 tsp. cumin
- 1 tsp. chili powder
- 1/2 tsp. dried cilantro
- Tortilla chips
- Pepper Jack cheese, grated, for topping
- Sauté the onion, garlic and green pepper in the olive oil for about 5 minutes.
- Add the corn, chicken and tomatoes.
- Add the broth, water and seasonings; simmer until tender.
- Serve over tortilla chips; top with Pepper Jack cheese.
