Cranberry Nut Bread

  • 2 cups sifted all-purpose flour
  • 1 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 1/4 cup shortening
  • 3/4 cup orange juice
  • 1 Tbsp. grated orange rind
  • 1 egg
  • 1/2 cup chopped nuts
  • 1 cup cranberries chopped
  1. Sift together flour, sugar, baking powder, soda and salt. Cut in shortening.
  2. Combine orange juice and rind with well-beaten egg.
  3. Pour all at once into dry ingredients, mixing just enough to dampen.
  4. Carefully fold in chopped nuts and cranberries.
  5. Put into greased loaf pan (9x5x3-inch); spread corners and sides slightly higher than center.
  6. Bake at 350 F for about 1 hour. Store overnight for easy slicing.
