Favorite Healthy Bran Muffins

  • 3 cups raw bran (divided use)
  • 1 cup boiling water
  • 1 stick butter
  • 1 cup brown sugar
  • 2 1/2 cups all natural whole wheat flour
  • 2 tsp. baking soda
  • 4 Tbsp. cinnamon
  • 2 cups buttermilk
  • 2 eggs
  • 4 red delicious apples, cut and shredded
  • 2 cups whole walnuts or sliced almonds
  1. Mix 1 cup bran with boiling water; set aside.
  2. Mix butter and brown sugar with a spatula. Add whole wheat flour, the remaining bran, baking soda, cinnamon and buttermilk.
  3. Add 2 eggs to the bran/water mixture; stir well. Add to the butter and brown sugar mixture. Add apples and your choice nuts to the mixture.
  4. Place scoop of mixture in sprayed muffin tins. Bake at 350 F for 15 minutes.
  5. You can also add blueberries, pears or carrots in place of apples.
