- 3/4 cup Lite Miracle Whip
- 2 tsp. lemon juice, freshly squeezed
- 1 1/2 tsp. sugar or 3 pkgs. stevia
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 10–oz. can Swanson brand chicken
- 2 stalks celery, finely chopped
- 1 to 2 Gala apples, diced
- 1/2 cup almonds, sliced
- Mix the Miracle Whip, lemon juice, sugar, salt and pepper. (If the mixture is not sweet enough add sugar, 1/2 tsp. at a time, until desired sweetness is obtained.) Set aside.
- In a medium bowl place the remaining ingredients. Gently stir in the creamed mixture. The salad must be refrigerated for at least 4 hours. Serve as a filling for sandwiches or with crackers.
