- 3 cups raw bran (divided use)
- 1 cup boiling water
- 1 stick butter
- 1 cup brown sugar
- 2 1/2 cups all natural whole wheat flour
- 2 tsp. baking soda
- 4 Tbsp. cinnamon
- 2 cups buttermilk
- 2 eggs
- 4 red delicious apples, cut and shredded
- 2 cups whole walnuts or sliced almonds
- Mix 1 cup bran with boiling water; set aside.
- Mix butter and brown sugar with a spatula. Add whole wheat flour, the remaining bran, baking soda, cinnamon and buttermilk.
- Add 2 eggs to the bran/water mixture; stir well. Add to the butter and brown sugar mixture. Add apples and your choice nuts to the mixture.
- Place scoop of mixture in sprayed muffin tins. Bake at 350 F for 15 minutes.
- You can also add blueberries, pears or carrots in place of apples.
