- 1 bundle organic carrots
- 1/4 cup smoked olive oil
- 1 tsp. Celtic Sea Salt
- 1 tsp. fresh or dried thyme
- Preheat the oven to 400 F.
- Peel the carrots; rub oil over each entire carrot.
- Sprinkle with sea salt and thyme.
- Wrap in parchment paper; bake for 20 minutes
