Provided by Rick Moritz for the April 2022 issue of EnnisNOW Magazine.

Chicken Broth:

  • 6 cups chicken broth
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 Tbsp. garlic powder
  • 2 cups chicken, chopped and cooked

Dumplings:

  • 1 cup all-purpose flour
  • 2 Tbsp. baking powder
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 3/4 cup whole milk
  • 5 Tbsp. butter, melted
  1. For broth: Combine all ingredients; bring to a boil.
  2. For dumplings: In a large bowl whisk together the dry ingredients.
  3. Add the milk and butter; stir until the dough forms a ball. If the dough seems a little too dry, add a little more milk.
  4. Roll out the dough to about 3/4 inch thick; cut it into 3/4-inch by 3/4-inchsquares.
  5. Drop the dumplings into the pot of boiling chicken broth. Boil on high for 2 minutes.
  6. Reduce the heat to medium; cook for 35 minutes or until light and fluffy.
