Swiss Steak (West Virginia Style)

  • 1 lb. sirloin tip
  • 2 Tbsp. cooking oil
  • Salt and pepper, to taste (divided use)
  • 1 onion, chopped
  • 1 green pepper, thinly sliced
  • 1 cup ketchup
  • 4 potatoes
  • 1 pkg. baby carrots
  • 1/2 head cabbage, sliced in 1/2-inch wedges
  1. Brown sirloin tip in oil on both sides; add salt and pepper.
  2. Put steak in a roaster. Cover with onion and green pepper; pour ketchup over top. Add water just to the top of the meat.
  3. Cover and bake in oven at 350 F for an hour. Take pan out and add potatoes, carrots and cabbage around meat, adding water, if needed. Salt and pepper vegetables.
  4. Cover and continue baking for about an hour, or until vegetables are tender.
