- 6-8 boneless chicken thighs, skinless or with skin
- 1/3 cup low-sodium chicken broth
- Juice of 1 lemon
- Zest of 1/2 lemon
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/2 tsp. paprika
- 1 tsp. Italian seasoning
- 3 Tbsp. fresh thyme
- Salt, to taste
- Pepper, to taste
- 4 garlic cloves, sliced or minced
- 1/2 stick butter, diced
- Place the chicken thighs in a slow cooker.
- In a small bowl, combine the chicken broth, lemon juice and zest; pour the mixture over the chicken.
- In a separate small bowl, combine the garlic powder and the next 6 ingredients. Sprinkle the seasoning over the chicken.
- Top the chicken with garlic and butter. Cover; cook on high for 3-4 hours. Serve with mashed potatoes, rice or quinoa.
