Garlic Roasted Broccoli

  • 2 heads broccoli, cut into small florets
  • 3 Tbsp. melted coconut oil (or oil of choice)
  • 1 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 5 cloves garlic, minced
  • Pinch red pepper flakes (optional)
  • 1 tsp. lemon juice
  1. Preheat the oven to 400 F. Toss the broccoli with the oil, salt, black pepper and garlic. Place a single layer on a baking sheet, preferably with a rim.
  2. Bake until the broccoli is tender, can be pierced with a fork and the edges are browning — about 15-20 minutes. Turn once halfway through the cooking; add the red pepper flakes, if desired.
  3. After baking, squeeze the lemon juice liberally over the broccoli. Serve.
