Herb Crusted Halibut

  • 1 egg
  • 1/4 cup seasoned breadcrumbs
  • 1/2 tsp. dill
  • 1/2 tsp. rosemary, chopped
  • 1/2 tsp. thyme
  • 1/2 tsp. herbs de Provence
  • 1/2 tsp. paprika
  • 2 halibut filets
  • 1/2 Tbsp. butter
  • Lemon wedges
  1. Preheat oven to 400 F. In a shallow dish, lightly beat the egg to create a wash for the filets. In a separate shallow dish, mix together the breadcrumbs and all herbs and spices.
  2. Gently dip the filets into the egg wash; then dip them into the breadcrumb mixture, fully coating them on both sides. Place the filets in a lightly greased baking dish. Top each filet with a pat of butter.
  3. Bake for 15 minutes, until the crust is golden and the fish flakes with the touch of a fork. Squeeze lemon juice over the filets; serve immediately.
